Solar Drying - Canopy
This coffee has been standardized with a double fermentation process to balance the sweet, delicate and floral notes. The cherries from the Dali coffee batches are fermented for 18 hours, then pulped and fermented for a further 36 hours. In this process, the coffee is washed with water from the farm's own reserve and dried on display in the Helda house or solar dryer.
